I have a 2015 Chevy Equinox with base speakers and monochrome radio. I was told that installing a new head unit bypasses the factory noise cancellation. Can anyone confirm this?

If you install a different "head unit" you will loose necessary controls that are on the radio screen. OTOH . . there may be aftermarket units that emulate some or most of those controls and setting functions.
You might be better off getting an upgrade stock radio from another source (recycler) and add an amp and front end for it. The radio can be hacked to input your Equinox VIN using a $12 interface and free software. Also detailed in a thread here.
There are a few threads here that detail that.

You don't need to cut the microphones, you have other options.
Like pull #7 fuse in the under dash fuse block.
Or unplug the ANC Module.

Does pulling the fuse make the radio go blank? I'd like to still have the date, time, and temp displayed.

Good question, I have the 8 speaker Pioneer system with V-6 that is different than yours.

One side of fuse #7 is battery voltage and the other is a red/white wire, circuit #4340, which goes to Pin #1 of the ANC Module.
Try pulling the fuse and let us know.
