well it's not so much an issue as it is an annoyance. after doing reading on these forums (which i love btw), i notice the 2011 model as individual switches. my question is, is it possible to put the 2011 setup on my 2005?

Anything is possible - you'd have to buy the 2011 light assembly, and install - go for it ! I'm sure it'll be a few bucks.

you can wire an inline switch with the light....so that way the switch has to be in the on position for it to come on with the rest of the lights....

to the rear light, dunno....never ripped my headliner down......i know the map lights just pull right out, they are only held in by a couple clips...the rears should be the same.....

if i had to guess its probably run down the passenger side with the rest of the wiring...if you pull out the passeneger side rear cargo tray (over the wheel well), or pull out the plastic trim on that side, youll see there is a TON of wiring down that side of the vehicle.....itd be a PITA to find/trace what wires you need....
